You know sometimes when we say, "that's good enough," we are simply tired of doing something or we are not pressing for excellent. Average is ok. Sometimes I have to challenge that in my life to not accept average when there is something better.
However, SOMETIMES, in the area of our health and food choices, it is a REALLY good statement. Again, it was a weekend filled with parties and experiences that could have been disastrous. But, I made a plan and stuck to it. People who are cooking for us sometimes are determined we are going to try their.............. But I had an answer and a plan ready. It's all good. However, someone asked me yesterday if I was still drinking coffee, as they know I don't eat sugar. They knew the "other me" and how much I LOVED Italian sweet cream coffee creamer with piles of whipped topping. So, they assumed I gave up coffee. When I conveyed I now use Truvia and half/half, they smirked and I replied, "it's good enough." Well, that phrase shifted from "I'm tired of this project and average is ok" to "I have the power of choice on my side and my flesh will have to understand it doesn't always get what it wants - and REALLY that's good enough." Totally different mindset. So sometimes, we just need to shift how we "see" things. YEA!
New recipe - use it sparingly as it contains aspartame but here goes: 1/2 cup of Smucker's natural peanut butter, 1/2 cup of sugar free caramel icecream topping (got the aspartame - so only on special occasions), 1 teaspoon of cinnamon, 2 tablespoons of milk. Mix first 2 ingredients, add others and may need an additional splash of milk. Use with apple wedges. YUM!!!!!
