It's a great morning to be enjoying health, isn't it? I pray your weekend went well and we are up and running towards an award-winning week. I know the weekends can be harder as we are out of our normal routine - but start making those weekends include the family in your health journey. It could be a challenge if your family is set on certain meals, but small changes are a great start. Maybe fresh fruit with whipped cream topping (you can make that easily) as a dessert will satisfy their "what are we having for dessert" question. While you are beating the heavy whipping cream, add the cold/solid pulp from a can of Goya coconut cream that you've had stashed in the fridge and a touch of coconut extract for a yummy flavor. Toss with some strawberries and blueberries and they will love it! Healthy too.

For those of you needing chips and crackers, Blue Diamond has come out with some new chips that are made from crushed almonds and some rice flour. I did try a few back before January and they are good. They are expensive and contain some words I can't pronounce (which I often choose to not eat) but if you are starving for a chip, as the Super Bowl is coming up - these could work. Eat sparingly though - they are packed with calories. I am working on a recipe for almond flour tortillas and if that works, those can be cut in strips, tossed with some coconut oil, sea salted, and baked in the oven for chips. More to come on that. Until then, here is the bag of chips that could help with your healthy snack THAT I KNOW you are preparing for the weekend. (wink) OR........help with that mexican craving for salsa that some struggle with. Make sure you check the salsa for sugar or make your own. My husband ate a whole bag of these, so the men folk will share in your new found "pleasure."


I was restructuring my cookbook yesterday, that I started compiling when I began HCG, and came to an eye-opening revelation. (I have been compiling recipes from multiple sources and creating new recipes and I keep them in a "pink" folder) When I laid out my recipes, I had about 6 side dishes, 10 main course meals and 40 desserts. HAHA! Can you see where my addiction was??? Oh well, at least knowing where I need recipes will push me to create in those areas. If you have friendly recipes to share, we always enjoy trying new things. And, creating desserts does help me. If you know what I mean????

Hey another news flash, one of the fam ate at Founders on the square in Senoia over the weekend and said their cauliflower mashed potatoes were to "die for." Can't wait to get there to try some. And finally this morning, congratulations to Jeni Sumner who reached her goal of 30 pounds Saturday morning. We are SOOOOO proud of you. She is working out now and enjoying a healthy, eating maintenance plan WITH HER HUSBAND. Love families choosing life together.
