Good morning. Did you receive that awesome testimony from one of the fam yesterday? Isn't it great to know that during a season where everyone else "plans" to gain weight - we are "planning" to eat healthy. It's also nice when others can validate that we are winning the fight against obesity. YEA!
On days like today, when it's sunny and warm, and the grill may be fired up, remember that roasting your veggies is a great way to add some variety into the day. It's harder to me during the winter to think "veggies." Maybe it's a mind set? I love hot soups and chili - but sometimes I get into a place where I substitute a bowl of chili for my veggies and I have to remind myself to get those raw and cooked veggies in. I am loving the experience of trying new things with spaghetti squash and zucchini sliced thin. I saw a recipe the other day in which they used the zucchini, in really thin slices, and the spaghetti squash - like lasagna noodles - and made a lasagna. Do some research on slicing the zucchini and letting it drain - with a tbs of salt - and then boiling it quickly to use. Lots of options here. YUM! And, I saw zucchini strips that were baked using panco, spices, and parm cheese. We could make bread crumbs with melba toast or Ezekiel bread cooked really dry. Again, lots of options for getting those veggies in.
Okay - gotta run, BIG game coming on at 4. Go DAWGS! I am making cauliflower pizza and hot stevia tea. YUM!
