December 19, 2013 - Your Christmas Treat

Just a brief conversation this morning as our coffee time has been deep the past week or so. (we will visit another Christmas story character tomorrow) This morning I decided to give you a "taste" of one of the recipes in my upcoming devotional cookbook for your Christmas treat. Here's one of my favorite recipes, especially at Christmas. have a GREAT Thursday, PK Guilt-free Fudge Ingredients: 16 ounces light cream cheese, softened 3 unsweetened chocolate squares (1 ounce each) melted (in microwave-safe container) and cooled (for about 5 minutes) 1/2 cup xylitol 1 teaspoon vanilla extract or peppermint ½-3/4 cup chopped pecans (optional) Preparation: 1. In a small mixing bowl, beat the cream cheese and xylitol well until there are no lumps. 2. Add the slightly cooled chocolate and vanilla and mix until smooth. 3. Stir in pecans. 4. Pour into 8-inch square baking pan lined with foil. Cover and refrigerate overnight. Turn the fudge out onto a large platter and peel the aluminum foil from the back. 5. Serve chilled, as the cream cheese will soften at room temperature.
